Chicken Drumsticks with Spiced Sweet Potato Wedges
Ingredients:
Method:
  1. Preheat oven to 200°C/180°C fan-forced
  2. Combine tomato sauce, vinegar, tamari and 1 teaspoon paprika in a small jug. Arrange chicken legs in a large baking dish. Pour over sauce and turn chicken to evenly coat. Cover dish with foil and bake for 20 minutes. Remove foil and bake for a further 30-40 minutes or until drumsticks are cooked through, golden and caramelised
  3. Meanwhile, place sweet potato on a baking tray lined with baking paper. Drizzle with oil and sprinkle with remaining paprika and the cumin. Toss to coat and bake 30 to 40 minutes or until golden and tender
  4. Serve chicken and wedges with mixed salad leaves and lemon

  • Choose gluten free tamari to ensure this recipe is gluten free.
