In a large wok over high heat, stir fry the chicken mince for a few minutes until cooked through. Remove from work and set aside
Add coconut oil to wok, and stir fry zucchini until soft and tender.
Add chicken mince back to work with zucchini, then add garlic, fish sauce and chili flakes.
Stir fry until warmed through, and then mix fresh basil leaves through. Season with salt to taste
Serve alone or on a bed of cauliflower ‘rice’, basmati or brown rice.
