Method:
Dilmah "t" earl Grey Tea smoked vegetables terrine, eggplant caviar, tomato petals
  1. Slice 2 eggplants lengthwise, 2mm thick
  2. Skin tomato, cut in quarter, remove seeds, keep skin aside
  3. Roast and skin capsicums
  4. Place all vegetables on a cooling rack
  5. Toast Dilmah "t" Earl Grey until smoky
  6. Place the vegetables over and cover with foil
  7. Cover terrine mold with cling film
  8. Place eggplant in the mold, alternate with vegetables until covered and Refrigerate
  9. Cut an eggplant lengthwise
  10. Dress with oil, salt and pepper
  11. Roast in the oven until the flesh is soft
  12. Scoop out, blend to a smooth paste
  13. Place tomato skin on a tray
  14. Set up the oven with pilot light on
  15. Leave it to dry overnight
  16. Place a slice of the terrine on the plate
  17. Add one quenelle of eggplant caviar
  18. Garnish with dried tomato petal
