Easy Beef Nachos
Ingredients:

Tomato Salsa
Method:
Beef Nachos
  1. Preheat oven to 180°C/160°C fan-forced
  2. Brown mince in a large oiled frying pan
  3. Stir in salsa
  4. Bring to the boil, reduce heat and simmer for 20 minutes
  5. Arrange corn chips in a shallow (about 8 cups) oven-proof dish
  6. Top with beef mixture
  7. Sprinkle with cheese. Bake for 8-10 minutes or until cheese melts
  8. Dollop with sour cream, sprinkle with avocado, spring onions & coriander
  9. Serve with lime wedges
Tips & Hints:

Tomato Salsa
  1. Drain tomatoes in a sieve over a bowl. Discard juice
  2. Combine drained tomatoes, onion, garlic, chili, lime or lemon juice, cumin and sugar in a bowl. Stir through coriander. Season to taste and serve
