  1. Heat half the oil in a pan and cook the eggplant until golden, stirring frequently. Set aside
  2. Heat the remaining oil and cook onions until softened. Add the spices, tomato paste and cook until fragrant
  3. Add the diced tomatoes, honey, vinegar and cook until jam like (about 5-10 minutes). Add the eggplant back in, stir to coat
  4. Mix in chopped parsley
  5. Season with sea salt and cracked black pepper
