Method:
Garlic and Basil Mushroom Soup
- Heat up a pot on the stove
- Finely dice the brown onion and crush the garlic. Add to the hot and saute until brown and aromatic
- Dice the button mushrooms and add to the pot. Allow to cook for approximately 5 minutes
- Add the vegetable stock and allow to simmer for 10 minutes
- Add the sour cream and basil leaves to the mixture and gently use a mixer to puree the ingredients together until it reaches a smooth consistency
- Continue to gently simmer for a further 10 minutes
- Serve with basil leaves
