Prepare the chicken breasts in crushed ginger, juice of half the lemon and olive oil. Season with salt and pepper to taste.
Poke the thyme sprigs into the flesh (make holes with a sharp knife first if you need,) and marinate for 20 minutes.
Barbeque on the hot grill until lightly blackened and cooked through, about 8-10 minutes each side.
Place other half of lemon on the grill as well, squeeze juice over chicken to serve.
