Hazelnut Praline
  1. Preheat oven to 150°C using the traditional function
  2. Place hazelnuts on baking tray and roast for 5 - 6 minutes
  3. Then rub in a clean towel to remove husks
  4. Chop roughly
  5. Lightly grease a baking tray and line with baking paper
  6. Spread hazelnuts on tray
  7. Combine sugar and water in a heavy medium sized saucepan
  8. Stir over low heat until sugar dissolves
  9. Increase heat and boil without stirring until syrup turns golden
  10. Swirl the praline mixture (for around 6-8 minutes), occasionally brushing down sides of pan with wet pastry brush
  11. Remove from the heat and cool for 1 minute (until the bubbles disappear)
  12. Carefully pour hot praline onto the baking tray
  13. Cool until praline hardens
  14. Break praline into pieces
