Mixed Berry & Espresso Mascarpone Mini Parfaits
Ingredients:
Method:
  1. Place berries in a single layer onto a tray. Set aside for 30-40 minutes or until just defrosted
  2. Beat mascarpone, icing sugar and vanilla in a bowl until light and creamy. Fold through whipped cream and espresso coffee
  3. Spoon mascarpone mixture and berries in 12 small serving glasses. Sprinkle with chocolate and serve
Tips & Hints:
  • If preferred, make 6 large parfaits, layering ingredients in tall serving glasses.
  • The mascarpone mixture can be made a few hours in advance and stored in an airtight container in the fridge.
  • Buy a short black espresso coffee from your favourite barista to use in the recipe. Add a little extra coffee for a stronger coffee flavour.
