This pudding recipe uses panettone to make a warming winter dessert. It is a twist on the classic bread and butter pudding recipe.

Panettone Pudding
Ingredients:
Syrup
Method:
  1. Preheat oven to 150°C on fan forced cooking function
  2. Lightly grease a 2 litre capacity oven proof dish
  3. Butter sides of the panettone with remaining butter and place in dish
  4. In a large bowl whisk together cream, milk, eggs, sugar, zest and vanilla bean seeds. Pour over panettone and allow to soak for 15-20 minutes
  5. Sprinkle with almonds
  6. Place dish in a large roasting pan. Add enough hot water to come halfway up the sides of the baking dish
  7. Cover with baking paper and foil
  8. Bake for 55-60 minutes or until custard is set
Syrup
  1. In a small saucepan on medium-low heat, stir all ingredients until sugar is dissolved.
  2. Increase heat and bring to the boil. Boil 2-3 minutes without stirring, until syrupy. Brush over hot pudding
  3. Serve hot or warm
