Rhubarb and crumble cake

Method:
Rhubarb Cake
  1. Preheat oven to 180°C and grease and line a round spring form tin.
  2. Using an electric mixture combine butter and sugar until mixture is smooth, add vanilla and eggs, one at a time. Mix well, then fold in the flour.
  3. Pour mixture into cake tin and smooth the top, then place the rhubarb pieces on top of the batter.
  4. Then spread the crumble mixture over the cake mixture and rhubarb and sprinkle with brown sugar.
  5. Bake cake in oven for 30 minutes, then reduce the heat to 165°C and bake a further 15, or until skewer comes out clean.
Crumble
  1. To make crumble, combine the flour and butter in the electric mixer.
