This easy smokey chipotle and beetroot tortilla recipe is the perfect snack idea, or enjoy for lunch or dinner. Also this recipe is a great 'finger food' recipe for entertaining.

Smokey Chipotle and Beetroot Tortilla
Ingredients:
Method:
  1. Pre-heat oven to 180°C
  2. Place Cobs Hip Chips in a bowl
  3. Whisk eggs lightly, pour over chips. Fold to coat. Leave to rest for 5 minutes
  4. Heat oil in an oven proof 20cm non-stick frying pan over medium heat. Pour in chip and egg mixture. Cook for 5-8 minutes or until set
  5. Sprinkle over cheese and place in the oven for 5-8 minutes or until cooked through and cheese is golden
