This is the best mini sticky date pudding recipe for a winter dessert. Sticky date cake is a winter and autumn favourite at dinner parties.

Steamed Mini Sticky Date Puddings
Ingredients:
125g butter
1 cup of brown sugar
2 eggs
1 teaspoon vanilla essence
1 3/4 cup of self raising flour
3/4 cup of sour cream
1 cup of chopped pitted dates
Caramel Sauce
60g butter
1/2 cup brown sugar
300ml cream
Method:
Cream butter and sugar together until light and fluffy
Add eggs one at a time beating well after each addition. Blend in vanilla
Fold in sour cream, flour and dates into mixture until well combined
Spoon mixture into 8 ramekins (greased) leaving about a 2cm space at the top
Place the ramekins in a perforated steamer tray
Cover with baking paper first then foil
Steam (100°C) for 18 minutes
Serve puddings hot with caramel sauce and a dollop of cream or ice cream
Caramel Sauce
Melt butter and sugar in saucepan until dissolved
Add cream and simmer for 5 minutes until slightly thickened
