Method:
Sumac Spiced Lamb & Feta Filo Cigars
  1. Pre-heat oven to 190°C on fan assisted cooking function
  2. In a large mixing bowl place the lamb mince, fetta cheese, coriander, sumac, salt, and pepper together
  3. Mix well and set aside
  4. Heat a tablespoon of olive oil in a non stick frying pan
  5. Saute onions until soft
  6. Add to the lamb mixture and mix well
  7. Using about 2 dessertspoons of the lamb mixture, form a sausage shape
  8. Lay out a sheet of filo pastry.(Make sure you cover the rest of the sheets with a damp cloth to prevent drying out.)
  9. Brush the sheet of filo with melted butter and then lay another sheet on top
  10. Brush again with melted butter
  11. Cut pastry into three even rectangles, with the shortest side facing you, place the sausage shaped lamb mixture on each rectangle of pastry
  12. Fold the edges in and continue to roll until you get to the end, making sure that the last fold is underneath the parcel
  13. Brush with butter and place on a tray with lined baking paper
  14. Repeat the procedure for the remainder of the mixture
  15. Make sure to evenly space each roll on the tray
  16. Bake for about 20 minutes or until golden and crispy
  17. Serve immediately
