Method:
Thai Caramel Pork with Hot Chilli & Garlic
  1. Place the pork in a bowl and add the remaining ingredients, except oil, spring onions and fried shallots. Mix well and set aside for 20 minutes to marinate. Brush off excess marinade and divide pork into two parts
  2. Heat oil in a frying pan or wok and when very hot add half the pork and cook until browned. Remove to a plate and brown the remaining pork
  3. Return the first lot of pork to the pan with the remaining marinade and spring onions and cook on medium heat until the pan liquid glazes the pork
  4. Pile onto a serving plate and garnish with crisp fried shallots and some of the spring onion greens, finely sliced. Serve with rice or noodles
