One-Pot Sausage Pasta

Method:
  1. Heat oil in a large saucepan over medium heat, fry the onion and garlic until soft. Add sausage meat, breaking up with a wooden spoon and cook until brown
  2. Add capsicum and fry for 2 minutes. Add stock and tomatoes, bring to a boil, then add the corkscrew pasta. Return to boil, then reduce to a simmer, partially covered, for 15 minutes or until pasta is cooked
  3. Season, add spinach and stir through cheese. Serve and top with parmesan if desired
