  1. Heat a medium size saucepan with one tablespoon of olive oil on a high heat
  2. Drop in a small piece of onion. If it starts to sizzle, add in the rest
  3. Sautee onions until they are transparent then add the cous cous
  4. Reduce heat to medium and stir cous cous until it is mixed well with the onion then add the stock
  5. Break the thyme sprig into small pieces and add to the cous cous whilst cooking
  6. Stir occasionally until all the stock is absorbed
  7. Taste to check if it is "al dente" (to the bite). If not, add a little more stock
  8. When ready, set aside to cool down for 10 minutes
  9. Stir in the grapes and rocket
  10. Season with salt and pepper
  11. Transfer cous cous to a serving platter and serve with your favourite meat dish
