Caramelised Onions
- Put pan on medium heat
- Add onions to cast iron pot with 50ml oil with 1 tablespoon of salt
- Sweat onions down until translucent
- When onions brown, reduce heat to low - medium and add 2 tbsn sugar, 50mL oil and 2 tbsn balsamic vinegar
- Cook for 5 minutes and taste to test for more sugar and salt. Adjust accordingly
- Cook on a low heats until a rich brown colour and well caramelized. This may take up to 45 minutes
Tips & Hints:
- Use a heavy cast iron pot as this will help with the caramelisation, Don't cook on too high a heat or you will end up with a burnt taste
