Method:
Fusilli with Deconstructed Pesto
- Cook the pasta in a large pot of boiling water and 1 teaspoon of salt, stirring occasionally for 7 minutes or until al dente
- Whilst the pasta is cooking, heat a non stick pan and toast the pine nuts until golden. Set aside to cool
- Using the same pan, add the oil and saute the garlic on medium heat. When the garlic turns light brown in colour, add in the basil followed by the drained pasta
- Stir in the cheeses and season with pepper
- Toss with pine nuts and serve
