- Put the pine nuts in a dry heavy-bottomed frying pan over a medium heat and cook for 3 minutes, stirring frequently, until golden
- Transfer the pine nuts to the Vitamix machine, add the remaining ingredients and season with salt and pepper. Secure the 2-part lid and select variable speed 5. Turn the machine on and run for 35 seconds or until well combined. Serve immediately
Tips & Hints:
- makes about 150g/5 1/2 oz , this can be kept in the fridge for up to 5 days or frozen for up to 1 month, serve with: pasta, poached tuna or grilled vegetables.
