Rose with French Vanilla Tea-a-Misu

Tiramisu and Joconde
  1. Tiramisu: Whisk the egg yolks and sugar to make sabayon
  2. Heat the Rose with French Vanilla Tea to a simmer
  3. Stir in the dissolved gelatine
  4. Add the hot liquid to the mascarpone
  5. Whisk until smooth
  6. Fold in the sabayon and then the cream
  7. Joconde: Make a sugar and eggs sabayon
  8. Fold meal and flour and whisk meringue
  9. Fold it together and add butter
  10. Bake 180°C for 5 minutes
Assembly
  1. Cut discs of joconde
  2. Pour a little tea-a-misu mix in bottom of glasses
  3. Dip joconde into tea (2 bags per 250ml hot water)
  4. Place on top of teamisu
  5. Repeat joconde and tea-a-misu until reaches top
