Method:
Buckwheat blueberry protein pikelets
  1. Combine all ingredients except the blueberries in a medium sized mixing bowl and stir (or beat with an eggbeater) until mixture is smooth. Then stir in the blueberries Cook dessert-spoon sized blobs of the batter in a non-stick pan over a medium heat, with a tad of healthy oil (eg coconut or macadamia oil) to stop them sticking. Flip over when bubbles appear on the surface of each pikelet
