Method:
Pumpkin, Thyme & Caramelised Onion Galette with Goat's Cheese Served
- For the pastry, combine flour and butter in a processor and process until it resembles breadcrumbs. In another bowl, whisk the sour cream and water. Add to the flour mixture. Bind the mixture with a fork until it forms into a ball. Knead lightly on a floured surface then wrap with plastic and refrigerate for an hour
- Preheat oven to 200°C (traditional function) or 180°C (fan forced function). Toss the pumpkin and thyme with a sprinkle of salt and olive oil. Roast in the oven for 25 minutes. Set aside when ready

- In a mixing bowl, toss the pumpkin, onion and cheese lightly and set aside
- On a floured surface, roll out the dough to a 20 cm disc. Spread the pumpkin mixture on leaving about a 4cm border. Fold the border over the mixture, pleating the sides as you go. Bake for 30-35 minutes until golden brown
- When ready cut into quarters and serve with salad
Spinach and Walnut Salad
- For the salad, toss all the ingredients together and transfer to a serving bowl
