Method:
Pearl Cous Cous
- Heat a medium size saucepan with one tablespoon of olive oil on a high heat
- Drop in a small piece of onion. If it starts to sizzle, add in the rest
- Sautee onions until they are transparent then add the cous cous
- Reduce heat to medium and stir cous cous until it is mixed well with the onion then add the stock
- Break the thyme sprig into small pieces and add to the cous cous whilst cooking
- Stir occasionally until all the stock is absorbed
- Taste to check if it is "al dente" (to the bite). If not, add a little more stock
- When ready, set aside to cool down for 10 minutes
- Stir in the grapes and rocket
- Season with salt and pepper
- Transfer cous cous to a serving platter and serve with your favourite meat dish
