Blueberry Yogurt Crunch
- Put the coconut in a heavy-based saucepan over a medium heat and cook, stirring continuously, for 2-3 minutes until lightly toasted
- Put the yogurt, blueberries, banana, vanilla, honey and toasted coconut in the Vitamix machine and secure the 2-part lid. Select variable speed 5 and run for 20 seconds until combined
- With the machine still running, remove the lid plug and add the granola. Run for a further 5 seconds, being careful not to over-mix, so it stays crunchy. Serve topped with the extra berries

- This will keep in the fridge for up to 2 days.
