Method:
Garlic Prawns
  1. Put 1/2 inch oil in a cast iron tapas pan along with garlic
  2. Cook over medium/low heat until the garlic softens a little. Make sure the pan isn't too hot, as you don't want to brown the garlic
  3. Add prawns and salt. Cook prawns for about a minute on side and turn over
  4. After another minute turn up heat and add Passata (add chilli now if you like). Bring to a simmer for one minute
  5. Turn off heat, stir through basil and check for seasoning
  6. Serve immediately in the pan so the prawns stay hot
Tips & Hints:
  • For great flavor and texture look for tiger prawns or king prawns. Invest in good quality cast ironware such as Oigen.

Hi, this version of garlic prawns was delicious, I used 5 cloves of garlic and sprinkled across hot chilli powder to taste. Made some pasta to hAve with it and some crusty Vienna bread.
