Method:
Teriyaki Snapper
- Preheat your cast iron pan on medium heat
- Add vegetable oil
- Place fish in pan with the skin side down until about one quarter cooked (1 - 3 minutes) depending on the fish
- Turn the fish over and cook until a further quarter cooked
- Add mirin and reduce liquid until caramelized
- Add shoyu and turn off heat
- Turn fish a few times to coat the surface with sauce
- Serve immediately
Tips & Hints:
- For best results use a high quality cast iron pan, Serve with a simple salad of rocket, tomato and ginger dressing.
