Method:
Lobster and Curried Egg Sandwich
- Butter all bread but on one side only
- Spread curry egg mixture onto 4 slices of bread till it reaches the edges, place the other pieces of bread on top and cut crusts off and cut into fingers
Tips & Hints:
- Makes 12 fingers
Dilmah Lemon and Lime-infused mayonnaise
- Place all mayonnaise ingredients except oil in a food processor
- With the food processor is going, pour the oil in a gentle stream until really thick. You may need a little less or more oil. Season to taste
- Place in a bowl with the curry powder, egg and lobster
