Memphis Style Barbecue Baby Back Ribs
Ingredients:
Method:
  1. Sprinkle and rub the Memphis Style BBQ seasoning sachet evenly over both sides of the ribs, including the ends. Leave ribs to stand for 30 minutes while setting up the BBQ
  2. Arrange BBQ racks so that the ribs will be positioned not directly over the heat source (indirect heat). Preheat BBQ at 200°C
  3. Place a metal wire rack inside a large foil tray and place ribs on top. Close BBQ lid and cook 45 minutes. Brush the ribs with a quarter of the finishing sauce and cover the whole foil tray with foil
  4. Reduce temperature to 150°C. Return ribs to BBQ. Close the lid and cook for a further 40-45 minutes. Remove foil and brush ribs again with a little more of the finishing sauce
  5. Return ribs to BBQ, placing directly onto grill. Cook until glazed and lightly charred
  6. Rest ribs loosely covered in foil for 10 minutes. Using a sharp knife, cut between the bones. Serve with additional sauce, charred corn on the cob and lime wedges
