Carolina Style Pulled Pork

- Sprinkle and rub the Carolina Style BBQ seasoning sachet evenly over pork. If time permits, leave to stand for 30 minutes while setting up the BBQ grill
- Arrange a metal wire rack inside a large foil tray and place pork on top
- Preheat 200°C with the lid down
- Place tray into BBQ so that the heat source is not directly under the roast (indirect heat). Close the lid
- Cook 1½ hours, turning over every 30 minutes for even browning
- Remove pork from tray and wrap tightly in 2 layers of foil to completely enclose
- Reduce heat to 150°C and return covered pork to BBQ. Close lid again and cook for a further 3 - 3 ½ hours or until the internal temperature of the meat is 75°C. Remove and rest for 30 minutes
- Pull pork with 2 forks. Pour over ¾ of the finishing sauce and toss to coat evenly
- Serve in burger buns with coleslaw and pickles, drizzled with remaining sauce
