Make this delicious Carolina style pulled pork on the BBQ. Seasoned with a tangy mustard dry rub and sauce, this recipe is fantastic in pulled pork sandwiches.

Carolina Style Pulled Pork

  1. Sprinkle and rub the Carolina Style BBQ seasoning sachet evenly over pork. If time permits, leave to stand for 30 minutes while setting up the BBQ grill
  2. Arrange a metal wire rack inside a large foil tray and place pork on top
  3. Preheat 200°C with the lid down
  4. Place tray into BBQ so that the heat source is not directly under the roast (indirect heat). Close the lid
  5. Cook 1½ hours, turning over every 30 minutes for even browning
  6. Remove pork from tray and wrap tightly in 2 layers of foil to completely enclose
  7. Reduce heat to 150°C and return covered pork to BBQ. Close lid again and cook for a further 3 - 3 ½ hours or until the internal temperature of the meat is 75°C. Remove and rest for 30 minutes
  8. Pull pork with 2 forks. Pour over ¾ of the finishing sauce and toss to coat evenly
  9. Serve in burger buns with coleslaw and pickles, drizzled with remaining sauce
