Method:
Mini Bacon and Egg Filo Tarts
- Preheat oven to 180°C on fan forced function
- Grease 6 muffin hole tin using Olive Oil spray and set aside
- Heat a small frying pan on medium heat and fry the bacon until lightly brown. Remove from heat and stir in the chives and season with salt and pepper
- Spray (with Olive Oil spray) a sheet of filo pastry and fold into half crossways
- Spray the top of the sheet (with Olive Oil spray) evenly again and fold into half again (crossways) - repeat again
- Insert the pastry squares into the muffin mould allowing the sides to overhang. Repeat with the rest of the pastry sheets
- Divide the bacon mixture amongst the prepared filo pastry cases
- Break an egg into a bowl then gently place into a case. Repeat with the rest of the eggs
- Place in the middle of the oven for 20-25 minutes
- Divide the tomato on top of each tart and serve
