King Prawn Risotto
Ingredients:
1 cup of Arborio rice
1 1/4 to 1 1/2 cups of vegetable stock
2 tablespoons olive oil
1 onion, finely diced
2 cloves of garlic, crushed
1 cup diced veggies of your choice (eg pumpkin, zucchini, peas)
1 teaspoon of vegetable stock
1/2 cup chopped Italian parsley
1/2 cup white wine
1/2 cup grated Parmesan (optional)
Method:
Heat olive oil in large fry pan (medium heat). Add onion, garlic and a little bit of chopped parsley. Cook until soft and translucent
Add rice and cook until well coated in olive oil and onion mixture. Add wine and vegetables and simmer until all liquid has been absorbed
Place rice in a solId steamer tray. Boil vegetable stock and pour over rice mixture
Stir through and make sure stock fully covers rice. Place in steam oven (100°C) and cook for approximately 30 to 35 minutes
When ready, season with ground black pepper and sprinkle with parsley
