Roast Spatchcock
- Pre-heat your oven to 180°C
- Rub the skin of the spatchcock with salt to season
- Place half the rosemary and garlic inside the spatchcock
- Add foil to the ends of the drumsticks to prevent burning and tie the legs together with twine
- Put the remaining rosemary in the bottom of the cast iron pan
- Place spatchcock on the pan and arrange garlic around
- Roast for approximately 40 minutes on depending on your oven
- Let rest for a good 10 minutes before serving, garnish with a sprig of rosemary and serve
Tips & Hints:
- For best results don't skip the resting time.
