Chicken Coconut Noodle Soup
  1. Place stock, coconut cream, 1 portion of the kaffir lime leaf, lemon grass and chilli in a large saucepan and bring to the boil
  2. Reduce heat and simmer for 10 minutes
  3. Season the chicken with salt and mix into the other portion of kaffir lime leaf
  4. Whilst the stock is simmering, scoop teaspoon sizes of chicken mixture followed by the mushroom into the stock
  5. Continue to simmer for another 5 minutes. Remove lemon grass
  6. Add in the lime juice and fish sauce
  7. Just before serving, bring to the boil and add the vermicelli and cook for 4 minutes or until soft
  8. Serve immediately
