Method:
Chicken Coconut Noodle Soup
- Place stock, coconut cream, 1 portion of the kaffir lime leaf, lemon grass and chilli in a large saucepan and bring to the boil
- Reduce heat and simmer for 10 minutes
- Season the chicken with salt and mix into the other portion of kaffir lime leaf
- Whilst the stock is simmering, scoop teaspoon sizes of chicken mixture followed by the mushroom into the stock
- Continue to simmer for another 5 minutes. Remove lemon grass
- Add in the lime juice and fish sauce
- Just before serving, bring to the boil and add the vermicelli and cook for 4 minutes or until soft
- Serve immediately
