Cream of Fennel Soup with Smoked Salmon
Method:
Cream of Fennel Soup with Smoked Salmon
  1. Heat olive oil in a saucepan on medium heat and add the fennel
  2. Saute lightly and add the wine followed by water
  3. Reduce to low heat and cook for 25 minutes until soft
  4. Transfer to a blender or use a hand held mixer to blend until smooth
  5. Just before serving, add the cream and mix again
  6. Season with salt and pepper
  7. Stir in the salmon and serve
