Cream of Fennel Soup with Smoked Salmon

Cream of Fennel Soup with Smoked Salmon
Method:
Cream of Fennel Soup with Smoked Salmon
- Heat olive oil in a saucepan on medium heat and add the fennel
- Saute lightly and add the wine followed by water
- Reduce to low heat and cook for 25 minutes until soft
- Transfer to a blender or use a hand held mixer to blend until smooth
- Just before serving, add the cream and mix again
- Season with salt and pepper
- Stir in the salmon and serve
