  1. Grease and line a 26 x 16cm baking pan with baking paper
  2. Melt copha in a small saucepan on medium heat (level 7-8 if using a Blanco induction cooktop) until half melted. Remove from heat
  3. Meanwhile, place rice bubbles, milk powder, chocolate, icing sugar, coconut and your fruit of choice in a large bowl
  4. Mix with a large spoon to combine
  5. Pour in the copha and vanilla
  6. Mix until well combined
  7. Press mixture evenly into pan
  8. Chill for 2-3 hours until set then cut into squares
  9. Store in the refrigerator in an air tight container
Tips & Hints:
  • Feel free to use dried fruit of your choice
