- Grease and line a 26 x 16cm baking pan with baking paper
- Melt copha in a small saucepan on medium heat (level 7-8 if using a Blanco induction cooktop) until half melted. Remove from heat
- Meanwhile, place rice bubbles, milk powder, chocolate, icing sugar, coconut and your fruit of choice in a large bowl
- Mix with a large spoon to combine
- Pour in the copha and vanilla
- Mix until well combined
- Press mixture evenly into pan
- Chill for 2-3 hours until set then cut into squares
- Store in the refrigerator in an air tight container
Tips & Hints:
- Feel free to use dried fruit of your choice
