Tortilla Muffin

Method:
Tortilla Muffin
- Pre-heat the oven to 190°C on fan-grill function
- Grease a 6 mould muffin tray
- Cut the potatoes in half and place 2 halves in each mould
- Saute the onion with a little olive oil Cook until slightly brown and set aside
- Place sautéed onions with a good pinch of cheese in the mould. Fill about two thirds of the muffin mould.
- Mix eggs, cream, salt and pepper together in a bowl.
- Carefully pour egg mixture into each mould to cover the vegetables.
- Bake for about 18 minutes or until risen and golden brown on top.

- Manchego cheese is a well known sheeps milk cheese from Spain
