Passionfruit,Berry & White Choc Delight
- Passionfruit curd: Place passionfruit, butter, eggs, sugar and lemon juice in a medium size saucepan. Whisk over a low heat until the mixture thickens. When the curd is thick enough to coat the back of a spoon it is ready. Remove from the heat and place in a covered bowl or container in the fridge to chill
- Berries: Combine all berries in a bowl and sprinkle with extra caster sugar. Leave at room temperature to defrost
- To serve: Warm scones in an oven for 10 minutes at 100°C. Remove scones from the oven and place each scone on a serving dish. Spoon over the chilled passionfruit curd. Scatter with the berries. A little extra dollop of passionfruit can be added here too
