Thai Chicken and Vegetable Stir Fry
Ingredients:
Method:
  1. Heat canola oil in a large wok or frying pan over high heat. Add chicken breast fillets. Stir - fry for 5 - 7 minutes or until browned all over. Transfer to a plate
  2. Add to wok onion, red capsicum, yellow capsicum and sweet potato. Stir - fry for 5 - 6 minutes or until tender
  3. Add green beans. Stir - fry for 5 minutes or until just tender. Return chicken to wok
  4. Add Gourmet Garden Thai Seasoning, cashews and vegetable stock. Stir - fry until heated through. Add spring onions. Toss to combine. Serve with steamed jasmine rice
