Method:
Chicken & Potato Curry with Lemon Grass, Chilli & Ginger
  1. Season diced chicken with curry powder and set aside for 10 minutes
  2. Heat oil in a wok or large saucepan over medium heat
  3. Add chicken and brown lightly to seal
  4. Next, add diced potatoes and fry for 2-3 minutes, stirring often
  5. Add garlic, ginger, lemon grass and chilli and fry lightly
  6. Add coconut milk and 3/4 cup water and bring to a boil. Reduce heat and simmer gently for about 20 minutes, until chicken is tender
  7. Stir in kaffir lime leaves, then serve with rice or roti
