Creamy Malabar Chicken Curry
- Heat and grease a large non-stick pan with a little vegetable oil. Once hot add the onion and the mustard seeds and allow the mustard seeds to roast and pop a little
- Now add the chicken and allow the first side to brown a little before stirring
- Once half of the chicken is browned, add the remaining ingredients except the coconut milk or yoghurt. Allow to cook, stirring often, until the chicken is cooked
- You can now reduce the heat and mix the coconut milk or yoghurt in
- Garnish with a sprinkle of the Lightly Dried Coriander leaves
- To make the rice, prepare as per package instructions. While still hot stir through 80-100 coconut cream and 1 teaspoon of the Lightly Dried Coriander
- Wait for about 2-3 minutes to allow the leaves to steam through and then serve with the chicken
