Dilmah Lemon & Lime Posset
  1. Sift flour and salt, rub in butter
  2. Add eggs and sugar then gently fold in together
  3. Boil cream, add strained tea, add softened gelatine, then lemon/lime juice
  4. Pass through a strainer and set
  5. Garnish with pineapple leaves and raspberries
