Ingredients:
Leg of Lamb with Dukkah Crust
Roasted Beetroot and Fetta Salad
Method:
Leg of Lamb with Dukkah Crust
  1. Preheat oven to 180°C on fan forced cooking function
  2. Rub the lamb with salt and pepper followed by the mustard
  3. Transfer to a roasting pan
  4. Toss beetroot in olive oil and add to the roasting pan
  5. Place in the middle of the oven and roast for 40 minutes
  6. Sprinkle the dukkah on the top of the lamb as evenly as you can
  7. Continue to roast for another 10 minutes
  8. When ready, rest the lamb
  9. Drizzle with olive oil and serve with Salad
Roasted Beetroot and Fetta Salad
  1. Roast the beetroot with the lamb as directed above
  2. Transfer the cooked roasted beetroot to a serving bowl
  3. Sprinkle parsley over and garnish the top with fetta
