Mediterranean Tuna Pasta Salad

Ingredients:

250g farfalle pasta

185g can chunk tuna in oil, drained

1 Lebanese cucumber, halved and diagonally sliced

125g cherry tomatoes, halved

1/2 red onion, thinly sliced

1/3 cup Sicilian green olives

1 roasted red capsicum, cut into strips

1/4 cup ZOOSH Mighty Balsamic Splash Light Dressing

2 tablespoons toasted pine nuts

Method:

COOK pasta in a large saucepan of boiling salted water until al dente. Drain and rinse under cold running water
PLACE drained pasta, tuna, cucumber, tomatoes, onion, olives and capsicum in a large bowl and toss gently to combine
DRIZZLE with dressing. Sprinkle with toasted pine nuts. Serve immediately

That's a lovely dish for lunch with friends. The green olives make it really special. I added some parsley but it just gave it a bit of color. :)
