Potato, Chorizo and Spinach Tortilla
Ingredients:
Method:
  1. HEAT the oil in a frypan and cook the onions, garlic and chorizo over medium heat until onion is tender and chorizo crispy. Add the potatoes and seasonings and cook for 10-15 minutes, covered, or until potatoes are just cooked. Stir through the spinach. Remove and set aside
  2. WHISK together the eggs, PHILLY and cheese. Stir through the potato mixture then pour into a baking paper lined 32cm x 22cm baking pan
  3. BAKE in a moderately hot oven 200°C for 20-25 minutes or until cooked and golden. Serve hot or cool with salad
