A simple weekday dinner recipe, this macaroni, cheese and veggie bake is the perfect way to smuggle those nutrient rich foods into your after school dinners. Kids will love the taste of this cheesy dish.

Quick Macaroni, Cheese and Veggie Bake
Ingredients:
Method:
  1. Ask Mum or Dad to preheat the oven to 180°C and grease a medium baking dish
  2. Cook the macaroni according to packet instructions
  3. Stand alongside Mum or Dad while you melt the butter over a low heat in a large fry pan. Add the cooked and drained pasta, sweet corn and zucchini, and stir with a big spoon to mix together. Remove the pan from the heat, then stir though the cream and half of the cheese. Make sure everything is mixed together well
  4. Spoon the mixture into a medium baking dish, then use your hands to sprinkle over the remaining cheese. With Mum and Dads help transfer the baking dish into the oven to cook for 20 minutes or until the cheese melts and begins to turn golden. Remove from oven and cool for 5 minutes before serving
Tips & Hints:
  • Try experimenting with your other favourite vegetables for a different twist!
