Method:
Soy Poached Chicken
- Place the soy sauce, chicken stock, ginger star anise and cinnamon sticks in a large saucepan over high heat and bring to the boil
- Add chicken breasts and turn off heat. Cover and set aside for 40 minutes to poach. (The chicken will continue cooking in the hot liquid)
- Remove chicken from the poaching liquid and transfer to a clean chopping board. Thinly slice across the grain, cover with foil to keep warm
- Meanwhile, steam or cook snow peas in normal manner. Divide chicken equally among 4 serving bowls. Strain the poaching broth and drizzle a little over the chicken. Top with snow peas. Serve immediately
Tips & Hints:
- Any number of vegetables can be used in this recipe, alternatively, poach the chicken and serve in a salad or sandwiches
