Method:
Sumac Spiced Lamb & Feta Filo Cigars
- Pre-heat oven to 190°C on fan assisted cooking function
- In a large mixing bowl place the lamb mince, fetta cheese, coriander, sumac, salt, and pepper together
- Mix well and set aside
- Heat a tablespoon of olive oil in a non stick frying pan
- Saute onions until soft
- Add to the lamb mixture and mix well
- Using about 2 dessertspoons of the lamb mixture, form a sausage shape
- Lay out a sheet of filo pastry.(Make sure you cover the rest of the sheets with a damp cloth to prevent drying out.)
- Brush the sheet of filo with melted butter and then lay another sheet on top
- Brush again with melted butter
- Cut pastry into three even rectangles, with the shortest side facing you, place the sausage shaped lamb mixture on each rectangle of pastry
- Fold the edges in and continue to roll until you get to the end, making sure that the last fold is underneath the parcel
- Brush with butter and place on a tray with lined baking paper
- Repeat the procedure for the remainder of the mixture
- Make sure to evenly space each roll on the tray
- Bake for about 20 minutes or until golden and crispy
- Serve immediately
