Miso Soup
- Bring dashi stock to a simmer
- Wash scampi thoroughly in fresh water
- Cook scampi in dashi stock for 3 - 4 minutes depending on size
- Take scampi out and put in cold water
- Reserve dashi stock for soup
- Skim any foam from the top of the dashi
- Bring dashi to a simmer
- Stir through white and red miso being careful not to boil
- Remove underbelly section of the scampi using a pair of kitchen scissors and place one in each miso bowl
- Strain the miso soup and divide evenly amongst four boils
- Add sliced negi / shallots
- Serve immediately
Tips & Hints:
- Never let the miso soup boil, Buy scampi without any black colour in the head
