Apple Strawberry Cake
Ingredients:
Method:
  1. Preheat oven to 170C fan forced. Grease and line the base and sides of a 22cm round springform pan with butter and baking paper.
  2. Place butter and sugar in the bowl of an electric mixer and beat until pale and creamy. Add eggs, one at a time, beating until combined between each addition.
  3. Stir in sifted flour and buttermilk, in two batches, until combined. Stir in strawberries.
  4. Spread cake mixture into prepared pan. Smooth top. Overlap apple slices around the edge, brush with some of the melted butter.
  5. Bake for about 1 hour or until cooked when tested with a skewer. Brush with more melted butter and drizzle with honey whilst hot. Allow to cool for 30 minutes before removing from pan.
  6. Cut into wedges and serve drizzled with more honey. Serve with whipped cream.
Tips & Hints:
  • This cake freezes well. Freeze in portions and defrost in fridge.
  • You can add frozen blueberries instead of strawberries.
